INGREDIENTS:
1 Half Side of Salmon
2 cloves Chopped Garlic (Chopped)
10g Chilli Flakes
40mls Soya Sauce
1 squeeze Lime
60mls Honey
30g Butter
100g Potato Flour
1 Bag of Mixed Lettuce
1/2 Red Onion (Sliced)
1 Punnet Cherry Tomatoes (Sliced in 1/2)
100g Olives
1 Avocado cut inti cubes
30mls Rapeseed oil
Sea Salt & Cracked Black Pepper (Seasoning)
METHOD:
1. Lay the side of salmon on a board and slice pieces about 2cm thick
2. Coat each piece in seasoned potato flour
3. Place the non-stick pan on the heat and and a splash of rapeseed oil
4. Sauté each piece of salmon, making sure there is good colour on each piece and take out when almost cooked.
5. Add butter, garlic and chilli flakes cook for a few mins
6. Add juice of a lime, soya sauce and honey and reduce
7. Place the salmon back in the pan and reduce a little more until glaze coats the salmon
8. Mix together all salad ingredients in a bowl with a bit of rapeseed oil
9. Put the salmon on top of the salad in a bowl and spoon the rest of the glaze on top of each piece of salmon.
10. Season and enjoy!
