Ingredients
For the beef
· 4 Beef minute steaks
· 4 tbsp soy sauce
· Juice and zest from 1 orange
· ¼ tsp coriander powder
· ¼ tsp cumin powder
· ¼ tsp paprika
For the sauce
· 4 tbsp low fat mayo
· 1 tbsp chipotle paste or chipotle sauce or any of your favourite hot sauces
For the rest
· 8 small corn tortillas or flour tortillas cut into smaller circles using a saucer
· 100ml sunflower oil
· 1 avocado, peeled, stoned removed and thinly sliced
· 2 limes, cut into wedges
· 1 head of baby gem lettuce, shredded
· 1 onion, finally diced
· Some feta for crumbling
· A small bunch of coriander
· Hot sauce for drizzling
· Salt and black pepper
Method
1. To kick off this delicious and simple recipe let’s start marinading the beef, place the beef onto a plate or tray. Add the soy sauce, orange juice, orange zest, coriander
powder, cumin powder and paprika. Mix everything together and allow to marinade for 20 minutes.
2. Next up on the to do list is to make the chipotle mayo, it’s so easy, just combine both the mayo and chipotle in a small bowl. Season and mix, set aside.
3. Before you start cooking lets prepare all the toppings. Remove the avocado from its skin, pop out the stone and thinly slice, cut the limes into wedges, shred the baby gem lettuce, finally dice an onion, pick some coriander leaves, and crumble some feta.
4. To turn the tortillas into tostadas, place a frying pan on a medium heat and add enough oil to cover the base of the pan by 2.5mm to 5mm. when the oil is hot carefully add one tortilla at a time and cook for 1 minute for flipping. Cook for another 1 minute. Remove from the pan once golden and crispy. Drain on kitchen paper and repeat the process. For the beef, place a griddle pan on a medium to high heat. When very hot add the steaks and cook for 1 minute per side or until nicely browned on both sides. Remove to a chopping board and slice into strips.
5. To assemble the tostadas, spread some of the mayo across the tostada, top with a little beef, add a slice of avocado followed by the lettuce and onion. Finish them off with some feta, few sprigs of coriander, a drizzle of lime and a splash of hot sauce.
