Longganisa (Filipino sausage)

Ingredients

700 g mince pork (20 percent fat) 1 full head of garlic (minced) 80g brown sugar 1 tbsp sweet, smoked paprika 1 1/2 tbsp cornstarch 1tbsp soy sauce 1 1/2 tsp ground black pepper 15g salt

 

Method

1. In a big bowl, add all ingredients together and mix thoroughly. Let the mixture marinate for at least 1 hr.

2. Using clingfilm, form the pork mix into sausage shape and twist both ends to seal. Refrigerate overnight.

3. To cook, place sausage in a hot pan with sunflower oil and enough water to reach 1/4 of the sausage height. Allow the water to boil. (adding the water allows the pork sausage to fully cook without caramelising the sugar in the mix too quickly)

4. When the sausage is almost cooked and the water has completely evaporated, continue frying the sausages until the outside is nicely caramelised.

5. Serve with garlic fried rice, fried eggs and raw tomatoes. Enjoy.
