Catherine Fulvio's Aldi inspired recipe
French Toast with Maple Syrup, served with Scrambled Egg & Sausages wrapped in Bacon
Ingredients:
For the wrapped sausages:
8 Brannan’s Pork Sausages
8 slices of Brannan’s Streaky Rashers
For the scrambled egg:
6 Healy’s Farm Irish Medium Free Range Eggs
120ml Clonbawn Irish Fresh Milk
Salt
A little butter
For the savoury French toast:
12 slices sliced Specially Selected Vienna Bread
6 Healy’s Farm Irish Medium Free Range Eggs
150ml Clonbawn Irish Fresh Milk milk
1 ½ tbsp chopped chives
2 tsp chopped thyme
70g Emporium Grana Padano
1 tsp paprika
Nature’s Pick Vine Tomatoes, oven roasted
Oil, for frying
Specially Selected 100% Pure Canadian Maple Syrup Maple syrup, to serve
8 sprigs of rosemary, to garnish
Copped chives, to garnish
Method:
To prepare the sausages:
1. Preheat the oven to 200°C/fan 180°C/gas 6
2. Wrap each sausage in a bacon rasher, stretching the rasher a little and secure with a cocktail stick
3. Place on a tray into the oven and cook for about 20 minutes, turning often until cooked
4. Set aside and keep warm
To make the scrambled eggs:
1. Whisk the milk together with a little salt
2. Add a little butter into a non-stick saucepan, heat over a medium heat and pour in the egg mixture
3. Leave to set for 30 seconds before moving and stirring it around
4. Leave to set for 20 seconds again and keep repeating until just set
5. Add a knob of butter in just at the end
6. Keep warm
To make the savoury French toast:
1. Combine the eggs, milk, chopped chives and thyme, Grana Padano, paprika and whisk well
2. Soak the bread in the egg mix until it has absorbed enough mixture
3. Heat a frying pan with oil. Place the eggy bread into the pan and fry until golden
4. Take the cocktail sticks out of the sausages and slide in rosemary sprigs
5. Arrange the French toast on serving plates, top with roasted tomatoes, add the sausages and scrambled egg
6. Sprinkle chopped chives over the scrambled egg
7. Spoon a little maple syrup onto the French toast
8. Serve immediately
