(Serves 6)
Meatballs:
1 ½ lb/700g minced lamb
2oz/50g breadcrumbs
1 teaspoon of ground cumin
1 teaspoon garam masala
1 teaspoon ground coriander
½ teaspoon of chilli flakes
1 red onion-chopped finely
1 egg
2 tablespoons Irish Yogurts Clonakilty Whole Milk Natural Live Yogurt
2 dessertspoons chopped coriander
Yogurt Dressing:
7floz/200ml Irish Yogurts Clonakilty Whole Milk Natural Live Yogurt
1 dessertspoon tomato ketchup
Juice of ½ lime
Dash of tobacco sauce
Method:
1. Preheat the oven to 190C/375F/Gas Mark 5.
2. Mix all ingredients for the meatballs together in a bowl until thoroughly combined.
3. Shape into meatballs (approximately 12) and leave on a baking tray lined with baking parchment.
4. Place the meatballs in the oven for 18-20 minutes until they are cooked through. (Make sure they are fully cooked through to the centre)
5. Mix all yogurt dressing ingredients together.
5. Serve the delicious meatballs with some couscous, fresh coriander, lime wedges, the yogurt dressing (well chilled) and pomegranate seeds.
