Mindi Keane's Vegetable Momos
INGREDIENTS:
For The Dough:
2 cups plain flour
½ tsp salt
½ tsp baking powder
Water to bind into a dough
For The Filling:
1 carrot, grated
1 cup cabbage, grated
2 tbsp olive oil
½ cup onion, finely chopped
1 tsp garlic, pure
½ tsp ginger pure
1 tsp soya sauce
¼ salt
¼ tsp Garam Masala
¼ Turmeric#
¼ red chilli powder
1 tbsp lemon juice
2tbsp fresh chopped coriander
METHOD:
1. Mix your flour, salt and baking powder, then knead to a stiff dough with water.
2. Heat 2 tbsps of oil, then add your the onion, garlic & ginger.
3. Sauté over high heat and add the carrot and cabbage. Turn around over high heat till glossy.
4. Take off the heat and mix in your soya sauce, salt, lemon juice, and garam masala turmeric & red chilli and coriander.
5. Roll the dough thin until translucent and cut into 4"-5" rounds.
6. Wet the round edges and place some filling in the centre.
7. Bring edges together to cover the filling. Twist to seal and fill the rest in the same way.
8. Steam for about 10 minutes and serve with soya sauce and chilli sauce.
