Fruit Crumble
Ingredients:
• 250g Butter
• 140g jumbo oats
• 80g flaked almonds
• 60g mixed seeds
• 120g plain flour
• 130g light brown sugar
• 2tsp ground cinnamon
• 1kg fruit
• 100g sugar
• 4 tbsp corn flour
 
Method:
  1. Preheat the oven to 180oc. Grease a large baking dish with butter. Approx. 25cm x25cm
  1. To make the topping, put all the dry ingredients into a bowl and pour over the melted butter, mix together.
  1. In another bowl toss the mixed fruit (I like to use 600g mixed berries frozen and 400g chopped cooking apples peeled and cored.) with the sugar and corn flour until it is evenly distributed.
  1. Pour the fruit into the greased baking dish and then add the crumble mix on top.
  1. Bake in the oven for 40 mins or until the crumble on top is golden and the fruit has started to bubble up.
  1. Serve warm with freshly whipped cream or vanilla ice cream
