French Madeleines

INGREDIENTS

4 eggs
200g caster sugar
200g plain flour
1 ½ tsp baking powder
200g butter, melted and cooled
1 tsp vanilla extract
 
 
RECIPE:
1. Whisk the eggs and sugar together lightly.
2. Sieve the flour and baking powder together and mix into the eggs and sugar
3. Mix in the melted butter and vanilla
4. Allow to rest in the fridge overnight
5. Spoon/pipe into madeleine/other mini cake moulds and bake at 180 degrees Celsius for 10-12 mins
 
To decorate: Melt some good quality chocolate in the microwave, try to keep it below 35 degrees Celsius for a good set, then sprinkle with topping of your choice, e.g. chopped toasted nuts, freeze dried fruit, colourful sprinkles
