Neal Kearns' Smoked Bacon & Dexter Beef Burgers
Ingredients:
400g Minced Dexter Beef
150g minced smoked bacon
1 large onion, diced
2 garlic cloves, grated
Salt & Pepper
For the Hot Mayo:
100g Mayo
75g Ketchup
1tbsp horseradish
2 dash Worcestershire sauce
3 drops tabasco
Juice of half a lemon
To Assemble:
4 Burger Buns
4 slices of Dubliner cheddar or cheese of preference
Sliced Tomato
Lettuce
Sauté onions
Method:
1. In a medium hot pan, fry the diced onion in a little oil. Allow them to soften and caramelise, but do not let them turn brown.
2. When cooked, tip the onions into a bowl, and allow them to cool. Once cool, add the rest of the burger ingredients and mix well.
3. Shape the ingredients into four even thin burgers and wrap. Refrigerate for at least one hour.
4. Make the sauce by simply mixing everything together and season with salt and pepper.
5. Once refrigerated, gently brush the burgers with oil and add them to a hot griddle pan or BBQ and cook on one side for about 2-3 minutes. Flip them over and cook them for another 3 minutes with the pork mixed through, making sure they are fully cooked at 72oC.
6. With one minute to go, add the cheese to the top of the burger and allow to melt and bubble.
7. Place on a toasted bun, with the lettuce, tomato, and hot mayo. Add the sauté onion on top and add the top of the bun.
8. Serve with a cold beer (essential).
