Tara Walker's Sticky Honey Pork and Ginger Stir Fry
(Serves 4)
Ingredients:
3 tablespoons Rapeseed Oil
Best quality Pork fillet sliced into thin medallions
Red pepper sliced
Handful of Mange tout, sliced lengthways, string removed
1 tablespoon Honey
1 tablespoon Soy Sauce
2 tablespoons Sesame oil
2 tablespoons grated ginger
2 garlic cloves, chopped
1 red chilli, de-seeded and finely chopped
Handful of fresh Coriander
4 bunches of egg noodles cooked according to the package instructions
Handful of cashew nuts, roughly chopped and toasted until brown on a dry pan
Method:
- Heat a large non-stick frying pan or wok over high heat until almost smoking
- Mix the sauce ingredients- honey, soy, sesame oil -together and set aside.
- Add 1 tablespoon of oil to the pan or wok and swirl around to cover.
- Add the pork, using a tongs, placing the meat around in contact with the pan
- Stir-fry for 2-3 minutes over high heat. Remove and set aside on a warm
dish.
- Heat another tablespoon of oil, add the peppers and stir-fry for a couple of
minutes until slightly cooked. Return the pork to the hot pan with the ginger,
garlic and chilli.
- Add in the sauce, mix together well by stir-frying for another minute.
- Garnish with chopped coriander and toasted cashew nuts
