Chicken Tikka Masala

Chicken Tikka Masala

This Indian chicken tikka masala is an easy but flavourful version of everyone's favourite mild-medium curry! Serve with naan bread and mango chutney. Garnish with additional cilantro leaves.

Ingredients:

 

  • Chicken or 4 whole legs, each cut into 2 pieces (600 gm approx.)

 

  • Marinade:

  • 1/4 cup Plain yoghurt

  • 1 tsp Cumin powder 

  • 1 tsp Coriander powder 

  • 2 tsp Garam masala

  • 2 tsp Chilli powder 

  • 2 tsp Ginger garlic paste 

 

  • Other ingredients:

  • 3 large Onion’s ground to paste 

  • 4 medium ground Tomatoes –to a puree

  • 1 tbsp Butter 

  • 1 Green chilli chopped 

  • 1 inch Ginger piece finely chopped

  • 3-4 cloves Garlic finely chopped

  • 1 inch stick Cinnamon –

  • 3-4 Cloves 

  • 1 tsp Cumin powder 

  • 1 tsp Coriander powder

  • Garam masala – 1 tsp

  • Chilli powder – 1 tsp

  • Turmeric – 1 tsp

  • Salt to taste

  • Coriander leaves for garnish

 

Method:

 

  1. Marinate the chicken with the ingredients mentioned overnight or for at least 2 hours.

  2. Prep all other ingredients and keep aside.

  3. Preheat oven at 200 C for 10 mins. Place the chicken on a foil lined baking tray and pop them into to the oven to cook for 20-25 mins.

  4. As the chicken cooks you can move on to making the curry.

  5. Heat the butter and add the cinnamon and cloves.

  6. Once fragrant, add the onion puree and sauté.

  7. When the onions slowly begin to cook (say around 5 mins), add the ginger, garlic and chilli.

  8. Now add the rest of the spice powders and cook for 5 more mins. Add a splash of water so the spices don’t burn.

  9. Add the tomato puree to this and mix well.

  10. Pour in glass of water and salt to taste. Lower the flame and let this simmer for another 10 mins.

  11. In go the chicken pieces to this and garnish with fresh coriander leaves.

  12. Add more butter and cream if you’d like.
