Chocolate Whoopie Pies

Ingredients:

? 200g Caster sugar
? 170g butter (room temperature)
? 210g Plain flour
? 65g cocoa powder
? 1/2 tsp salt
? 1 tsp baking powder
? 1/4 tsp bread soda
? 2 medium eggs
? 125ml Buttermilk
? 60ml coffee
? 1 tsp vanilla extract

Method:

? Sift together the flour, cocoa, salt, baking powder & bread soda into a large bowl, whisk together and set aside.
? In a stand mixer with the paddle attachment or with a hand mixer cream together the butter and sugar until light and fluffy.
? In a separate bowl add the buttermilk, coffee, egg and vanilla and whisk together.
? Once the butter and sugar are at a light a fluffy stage you can start adding your other ingredients. Start with the dry ingredients adding in about 1/3 of the mix, followed by the wet ingredients and continue alternating until all ingredients are incorporated. You may need to scrape down the side of your bowl half way through.
? On a lined baking tray scoop the chocolate batter into small balls, I like it use an ice cream scoop as I find it easier to keep them all the same size but teaspoons will also work perfectly.
? Bake in a preheated oven 170 degrees Celsius for 8 minutes or until the tops spring back when touched gently.
? When whoopies are cooled you can sandwich together with a fulling of your choice, some of my favourite fillings are; vanilla buttercream, chocolate buttercream, chocolate ganache, peanut butter, the choice is yours!
