Lentils and Italian Sausage

Alberto's Lenticchie e Salsiccia (Lentils & Sausage, Italian winter warmer)

Ingredients:

250 gr Dry Green Lentils
450 Fresh Italian Sausage, skin off, cut in 4 each
500/650 gr Water
2 Carrots, diced
3 Celery Stalks, diced
100 gr Nduja
1 glass white wine
250 gr Chopped Tinned Tomatoes
4 Sage Leaves
½ Onion, chopped
1 Chicken stock cube
Rosemary
Oil

Method:

Over medium heat, sweat off in the oil the carrots, celery, and the onion; cook for about 4 minutes, no colour.

Add the Nduja and the Italian sausage, sweat off for about 5 minutes then add the lentils.

Deglaze with the wine, rosemary and add the water, stock cube and tinned tomatoes.

Bring to the boil, put the heath on minimum and simmer for about 45 minutes.

Taste for seasoning.
