Welsh Rarebit with an Irish Twist
ingredients:
50g Irish Butter
50g Flour
250g of Cheddar, grated
200ml of Guinness
Dash of cream
1 tsp English Mustard
2 Egg yolks
A few dashes of Worcestershire Sauce
2 pieces of thick country loaf or sourdough bread
method:
1. Melt the butter and flour to form a roux over a medium heat until you have a thick paste
2. Add the mustard and Guinness and whisk over heat until beginning the thicken
3. Add the cheese and Worcestershire Sauce and heat gently until the Guinness has reduced and the cheese had melted to a dark gooey cheesy sauce
4. Add the cream
5. Allow to cool slightly and stir it the beaten egg yolks
6. Toast the bread on both sided and slather with the cheese sauce on one side and grill until bubbling and melting
7. Serve immediately with extra Worcestershire if desired
