1.8kg to 2.2kg Aldi Turkey Crown
For the Rub (Rosemary & orange)
50ml Extra Virgin Olive Oil
2 tsps. fresh rosemary, finely chopped
2 tsps. fresh thyme, finely chopped
3 cloves of garlic, finely chopped
50ml honey
50ml fresh orange juice
1 orange, peeled & thinly sliced
Salt and pepper, to season
Bread Stuffing
300g butter
2 onion, finely chopped
5 cloves of garlic, finely chopped
2 tablespoons of freshly chopped thyme
400/500g fresh white breadcrumbs (gluten free)
2 tablespoons of freshly chopped parsley
salt and pepper, to taste
Instructions:
Make stuffing in advance (1 day): gently heat butter in a pan and sauté the onion, garlic, and thyme for 5 or 6 minutes until soft and not browned. Add the breadcrumbs, parsley, salt & pepper (to taste). Sauté for a further 2 or 3 minutes until all the butter is generously absorbed
Allow to cool and place in the fridge.
Note: Reheat with the turkey crown, 30 minutes before the turkey is due to come out of the oven.
Make the Rosemary & orange rub/glaze. In a small bowl, mix the olive oil, rosemary, thyme, garlic, honey, orange juice, and black pepper and salt. For best results, mix with an electric hand blender. Set aside
Instructions:
Preheat the oven to 190°C/ 170°C fan/Gas 5
Place the turkey crown in a roasting tin and brush over the glaze and carefully garnish with the orange slices.
Roast for 1 ½ - 2 hrs, basting occasionally, then transfer to a platter; cover with foil for 20-30 minutes.
Note
30 minutes before the turkey crown is ready, place the stuffing into the roasting tray, basting with the juices. Allow 20 minutes per kg, plus 70 minutes (2kg Crown, 110 minutes (so just under 2 hours)
