Simon's Salmon Pasta with Pesto Rosso
Ingredients:
100g Spaghetti (Or you’re pasta of choice)
2 salmon darnes
Pepper
200g Sundried tomatoes
200g Roasted Red Peppers
20g fresh basil
60g Pine Nuts
50g Parmesan (grated)
1 clove of garlic (grated)
50mls Olive Oil
Method:
1. Pre heat your oven to 180c.
2. Place your Salmon on a lined baking tray, and sprinkle with a little black pepper. Cook for around 12 mins, depending on how big your Salmon pieces are.
3. At the same time, pop the pasta on and cook as per pack instructions. While the pasta is cooking let’s make the pesto rosso, so chop your red peppers and your sun dried tomatoes, and add to a blender, then add the pine nuts, the garlic, the basil, the parmesan and the olive oil.
4. Blend together until you have a nice smooth paste, if it’s a little add a splash of water to loosen.
5. When the Salmon is cooked, flake the fish apart. Drain your pasta when cooked, and a two tsps. of the pesto rosso and stir through.
6. Flake the Salmon through the pasta, and serve in a bowl with some torn fresh basil and a grating of parmesan.
