Halloween Cocktails

Mixologist Darren Geraghty from the Candlelight Bar at Siam Thai in Dundrum joins us with a selection of devilish drinks

1. Trick or treat (Non-alcoholic)
50ml Pomegranate juice
30ml Raspberry and clove syrup
20ml Lime juice
Top with
Sparkling water
Build over ice in mixing glass, serve in novelty vessel

2. Jack O Lantern Punch (Non-alcoholic)
100ml Pumpkin syrup
200ml Pear juice
200ml Apple juice
90ml Limejuice
Top with Ginger beer
Build over Ice in punch bowl

3. Banshee Mule (Alcoholic)
50ml Mad March hare Poitin
6 Fresh lime wedges
Top up with Ginger beer(80mls)
1 active charcoal tab
Muddle limes and build in glass top with ice

4. Blood bath bellini (Alcoholic)?
20ml raspberry and clove syrup
20ml ballykeefe sloe gin
Top with prosecco
Build in glass

5. Bob the apple smash (Alcoholic)?
Tullamore dew whiskey
Apple
Pear
Vanilla
Mint
Lime
Ginger beer

6. Pumpkin spice syrup
· 1/3 cup pumpkin puree fresh
· 1 cup sugar or splenda
· 1/2 teaspoon vanilla
· 1 1/4 cups water
· 1 teaspoon cinnamon
· 1/2 teaspoon nutmeg
· 1/4 teaspoon cloves
· 1/4 teaspoon ground ginger
· Combine all in pot and bring simmer
· Stir throughout
· Strain and chill to use

7. Raspberry and clove syrup
1 cup raspberries
1 cup sugar
1 cup boiling water
1 clove
Add sugar on top of raspberries in a bowl and cover, leave over night
Add clove to water allow to brew for 2-3 minutes, add this hot mixture to now raspberry infused sugar and stir till combined, strain for smooth syrup
