(coconut & vanilla extract/powder are also good in this)
Method:
1. Preheat oven to 160°C.
2. Prepare an 18-muffin tin by greasing each well or by placing a paper baking up into each. Alternatively, use 2 bread pans.
3. Mix together flour, baking powder, and salt. Set aside.
4. Mix together sugar and oil in a large mixing bowl. Beat in the eggs and stir in the mashed bananas.
5. Add dry ingredients all at once to egg mixture stirring just enough to moisten.
6. Mix in chopped nuts, coconut or vanilla (all optional). Spoon batter into prepared muffin tins, filling two-thirds full.
7. Bake muffins for 25 minutes, or until golden brown. Remove from oven and cool on wire rack. If baking loaves of bread instead of muffins, fill two pans equally, then bake for 40 minutes.
