Vegan Chocolate ‘Truffles’
ingredients:
100g almonds soaked overnight, then drained
50g sunflower seeds soaked overnight, then drained
30mls Agave nectar or maple syrup (2 Tblsp.)
60g unsweetened cocoa powder (4 Tblsp.)
5mls vanilla extract
Dessicated coconut for decoration (cocoa powder or ground nuts are an alternative decoration)
method:
1. In a food processor, finely chop nuts and sunflower seeds. Add all the other ingredients and mix well until combined. (Honey also works nicely as the sweetener, so if you are not vegan, honey is a good alternative to maple syrup or Agave nectar.)
2. Taste your mixture to see if you’d like a bit more cocoa added, or a bit more of your sweetener. You might want them sweeter, or more chocolatey.
3. Form into small balls, roll in coconut for garnish, and chill.
4. Optional variations: add a drop of rum or a pinch of espresso powder before mixing
