Penne Pasta Salad with Poached Salmon, Roasted Vegetables & Sweet Chilli Mayonnaise.
RECIPE
Ingredients:
12oz/350g penne pasta
1 ½ mixed peppers-cut into chunks
1 box cherry tomatoes
1 red onion-cut into wedges
3 cloves garlic-crushed
3 tablespoons of sweet chilli mayonnaise
4 portions poached salmon
1oz/25g grated parmesan cheese
2 tablespoons chopped parsley
Poached Salmon:
4 portions of salmon
½ glass of white wine
Lemon wedges
Fresh parsley
1 onion-sliced
1 bay leaf
Salt& Cracked black pepper.
Sweet Chilli Mayonnaise
3 tablespoon mayonnaise
2 tablespoons sweet chilli relish
Method:
Line baking tray with parchment.
Put the salmon on the tray leaving the skin on the salmon.
Season the fish with a little salt and cracked black pepper.
Pour the wine over the fish
Scatter the remaining herbs, onions and lemon wedges around the tray for additional flavour.
Loosely cover the fish with a piece of parchment and tin foil and put into a preheated oven (180C/350F/Gas Mark 4).
Bake in the oven for 20 minutes, checking in on it occasionally.
Allow to cool, completely, on the tray and then break the salmon into pieces.
Bring a large saucepan of salted water to the boil. Add a little drizzle of olive oil which will stop the pasta from sticking.
Plunge the pasta into the boiling water and boil according to the packet instructions.
When the pasta is cooked strain into a large colander and leave it under cold running water until the pasta has completely cooled down. This process is known as blanching and refreshing. Retain it until required.
Preheat the oven to 180C/350F/Gas Mark 4
Meanwhile place the peppers, red onion, garlic and cherry tomatoes onto a flat baking tray. Season with a little salt and pepper, drizzle with a little oil and place in the oven and roast for 20-25 minutes or until all of the vegetables have softened completely.
Allow the vegetables to cool
Mix the roasted vegetables, poached salmon and the chilled pasta together.
Mix in some seasoning and the chilli mayonnaise and stir until it has completely coated all of the pasta & vegetables.
Arrange in a large serving bowl and scatter with the grated parmesan cheese and the chopped parsley.
