Mocha Loaf Cake

Ingredients:

Loaf cake:

175g self-raising flour

50g cocoa

1 tsp bread soda

150g caster sugar

2 eggs (beaten)

150ml milk

150ml oil

2 tbsp golden syrup

2 tbsp espresso powder

Buttercream icing:

100g icing sugar

50g butter

1 tbsp espresso powder

Method:

  1. In a bowl mix all your dry ingredients together (flour, cocoa, bread soda, sugar, and espresso powder).
  2. Combine beaten eggs, oil, milk and golden syrup in a separate jug or bowl.
  3. Add the wet mix to the dry mix and combine.
  4. Pour into a lined 2lb loaf tin.
  5. Bake in a preheated oven at 180 degrees for 50 minutes.
  6. Remove from the tin and allow to cool on a wire rack.
  7. To make the icing, beat butter in a stand mixer until soft, add in icing sugar and espresso powder.
  8. Pipe icing on top of cooled loaf cake with an open star tip or spread with a pallet knife.
