Pudding Bon Bons

Ingredients
200g Kelly's Black Pudding
50g Garlic and herb Cheese
100g Flour
100g Bread Crumbs
2 Eggs
Salt /pepper
Oil for Frying
Turf smoked Tomato Sauce
2kg ripe tomatoes,
3 good-size red onions, very roughly chopped
200g celery, very roughly chopped
5 tbsp. vegetable or olive oil or rapeseed oil
4 garlic cloves, sliced
1 tsp ground coriander
1 cinnamon stick
1 star anise
½ tsp ground black pepper
3 tbsp. tomato purée
½ tsp Worchester Sauce
200ml white wine vinegar
200g caster sugar

Method - Tomato Sauce

- Chop up the turf, place into an old pot, place over a medium heat, place tomatoes on a rack on top of the pot, cover with foil , and leave to smoke for 3-4 minutes, remove from the heat, cool and roughly chop.

- Put the onions and celery into a food processor and whizz until finely chopped. Heat some oil in a very large saucepan; add the onions and celery, cover, then soften over a low heat for 5 mins. Add the garlic, cook 5 mins more, then tip in the spices and cook for 1 min.

- Now stir in all remaining ingredients and bring to the boil. Keep on a bubbling simmer, uncovered, for 1 hr. until the tomatoes are squashy and the liquid has reduced by several inches. Discard the cinnamon stick.

- Carefully blend in a food processor or use a stick blender until smooth, then sieve into a bowl.

Method - Bon Bon

- Place the Black Pudding into a food processor and blend into a smooth paste.

- Divide the mixture into 12 round balls.

- Divide the cheese into 12 pieces and stuff into the middle of the black pudding balls, ensuring the cheese is full immersed in the mixture with no cheese to be seen on the surface

- Pass the balls through seasoned flour, shake of any excess flour, then pass through some beaten egg and finally through some seasoned breadcrumb, ensuring each ball has an even coating of breadcrumb.

- Cook in oil either in a pan until golden brown and crispy or in a deep fat fryer for 4-5 minutes at 170c
Place onto some kitchen paper

Assemble

Spread some sauce onto the base of a plate, place 3 balls onto the plate and garnish with some nice salad
