This is a delicious recipe to have to hand and all of the ingredients are store room essentials so your shopping list will be minimal.
Ingredients - Spiced Beef:
1lb/450g minced beef
1 red onion-very finely diced
6 mushrooms-chopped
1 ½ mixed peppers-finely diced
Seasoning
3 tablespoons sweet chilli sauce
2 tablespoons soy sauce
Pinch chilli powder
Pinch curry powder
Ingredients - Spiced Sweet Potatoes:
2 large sweet potatoes-peeled and cut into cubes
1 dessertspoon oil
Salt & black pepper
½ teaspoon chilli powder (or more as desired)
Method: Spices beef
1.Heat a large pan and quickly sauté the onion, mushroom and mixed peppers
2.Add the beef and cook for 4-5 minutes until cooked, then add in the chilli sauce, soy sauce, curry powder and chilli powder.
3.Allow the mixture to come to a bubble and then serve as outlined.
Method: Sweet potatoes
1.Place the sweet potatoes into a bowl, add in the oil and seasoning and chilli powder and mix 2.well.
3. Place them on a flat tray, lined with baking parchment and bake in a hot oven (190C/375F/Gas Mark 5) for 20-25 minutes.
To Serve:
Pile the sweet potatoes onto a large serving plate and top with the spicy beef mixture
Garnish if desired with some fresh rocket or herbs and serve immediately.
Edward’s Top Tips:
This dish can also be served with rice or with some crisp tortilla crisps. It’s also a delicious topping for baked potatoes or toasted crostinis.
