RECIPE: Black Bean Brownies with Avocado Frosting
Ingredients
Brownies
1 tin black beans
70g oats
3tbsp cacao powder
1tsp baking powder
80ml melted butter
4tbsp maple syrup
2 eggs
Frosting
1 avocado
1 tablespoon coconut oil
1 tablespoons cacao powder
1 tablespoon maple syrup
Decorating
Finely ground pistachios or seeds
Method:
1. Pre-heat oven to 180ºC.
2. Add all of the brownie ingredients to a food processor and blend until smooth and fully combined.
3. Turn into a tin lined with parchment paper and tap the tin 2-3 times to remove the bubbles.
4. Bake for 25 minutes until a skewer comes out clean. Then remove from the oven and leave to cool fully.
5. Meanwhile, make the frosting by adding all of the frosting ingredients to a cleaned food processor and blend until it turns into a silky, creamy texture.
6. Spread over the top of your cooled brownie and sprinkle over the finely ground pistachios.
