Joe Shannon continued his series on budget-friendly meals with a tasty pasta meal for four people.
Ingredients
1tsp of oil
¼ of and onion chopped
1 clove of chopped garlic
200g of dried linguine
¼ of diced pepper
1tsp of chopped coriander
300g, chopped cooked chicken
150ml of coconut milk
Method
Bring a pan of water to the boil, add a pinch of salt and a tsp of oil, place in the pasta and cook for 10-12 minutes, drain and refresh under cold water.
While pasta is cooking, heat a pan, add some oil.
Add the vegetables and cook until nice and soft.
Now add the coconut milk and simmer nice and slowly until it styarts to reduce and thicken.
Add the chicken and coriander and check seasoning.
Add the pasta (you can add in cold as the sauce will heat it).
Serve and enjoy.
