Street food is the latest trend and one area that has become a huge focus recently.
Dishes served outdoors are being stepped up a notch and street vendors are no longer seen as a pitch on the road to rush past and grab something quick from, but as somewhere to pick up delectable cuisine from all over the world.
This morning Joe Shannon is taking street food indoors with his flat bread with red cabbage slaw, spiced mince and cheddar cheese.
FOR THE FLATBREAD:
300g of plain flour + extra for dusting
Pinch of Salt
50g of Butter
185 ml of milk
3tbs of Irish rapeseed oil
1tblsp of Garlic puree + 1tblsp of chopped coriander
For the chilli mince
300g of your favourite chilli con carne mice
FOR THE SLAW:
Combine together 100g grated red cabbage with 50g raisins, season with salt and pepper. Combine with a tablespoon of mayonnaise.
METHOD:
1. Melt together the milk and butter, add 1 tbls of oil
2. In a bowl mix together the flour and salt, add the chopped coriander and puree garlic
3. Add the wet ingredients and mix together to form a dough, cover and rest for 15-30mins in the fridge
4. Give a little need and cut out into 4-6 pieces and roll on a floured board into rounds
5. Heat a pan and oil with remaining oil and cook for approx. 1 minute either side.
6. When cooked, add some slaw, warm chilli mince and grated Irish cheddar cheese and roll like a wrap and enjoy
