Looking for something both healthy and delicious for breakfast? Try these delicious protein pancakes.
Ingredients
4oz/110g coconut flour
4oz/110g plain flour
Pinch baking powder
1oz/25g whey protein (strawberry flavour)
1 tablespoon chia bia seeds with apple and cinnamon
2 ripe bananas-mashed
2 eggs
600ml soya milk
Methiod
Add the flours, baking powder into a bowl with the whey protein.
Beat in the eggs, mashed bananas and milk and mix until a thick batter has been achieved.
Mix in the chia seeds at this stage.
Heat a pan with a little oil and ladle small spoons onto the pan anc cook slowly on each side for 3-4 minutes until cooked. If desired you can finish them off in the oven to ensure that they are cooked through.
Serve immediately with a variety of toppings: Nutella, Apple syrup, honey, jam, berry compte, fresh berries, sliced bananas etc.
