Looking for something light yet hearty? Catherine's scone recipe is the healthiest of the bunch.
Ingredients:
125g/4oz Odlums Self Raising flour
124g/4oz Odlums Porridge Oats
1 level Tsp Odlums Baking Powder
Good pinch Goodall’s Cinnamon (optional)
50g/2oz Margarine or Butter
150ml/¼pt Milk
1 Eating Apple (grated)
Extra Oats for top, if liked
Method
1. Preheat oven to 200°C/400°F/Gas 6. Lightly grease a 15cms/6” sandwich tin.
2. Put the flour, oats, baking powder and cinnamon into a bowl and mix well.
3. Rub in the margarine or butter until mixture resembles breadcrumbs.
4. Add the milk and grated apple, stir until a dough is formed.
5. Turn onto a lightly floured board and knead gently. Transfer to prepared tin, press down evenly.
6. Cut into 8 wedges. Sprinkle with oats if liked. Bake for 20 minutes approx.. until risen and golden brown.
7. Turn onto a wire tray to cool.
8. Delicious served warm with butter, cheese or jam.
